Ingredients

    1 Tbls extralight olive oil
    2 Tblsp finely chopped fresh ginger
    4 green onions chopped
    6 cloves garlic chopped
    2 bell peppers diced
    1 can tomato paste
    1 pound of chicken breast , skinless and boneless, cut in one inch pieces
    1 28 ounce can tomatoes
    2 cups kidney beans (540ml) drained and rinsed
    2 cups black beans (540 ml) drained and rinsed

Directions

Heat oil in large skillet on medium heat.Add the ginger, onions and garlic and cook, stirring for about 1 minute. Add the peppers and tomato paste and cook for afew minutes more. Add the chicken, cook and stir for about five minutes until chicken in white on the outside. Add the tomatoes and bring to a boil. Reduce heat and simmer for 25 minutes. Stir in both beans and cook for an additional 15 minutes.

Serving Size: makes eight generous one cup plus servings
