Ingredients

    1 T. olive oil
    1/2 cup raw onion, chopped
    1/2 cup bell pepper, chopped
    1 T. minced garlic
    2 packets Sazon con culantro y achiote
    2 cups salsa
    4 cups water
    2 cans Goya Pinto Beans, drained
    1 can corn, drained
    3 cups of brown rice, uncooked

Directions

Saute' onions, garlic and bell peppers in olive oil until tender. Next add in two cups of salsa and four cups of water. Add two packets Sazon con culantro y achiote, two cans of pinto beans and one can of corn, drained. Add 3 cups of uncooked brown rice and bring to a boil. Turn heat to medium-low, cover and cook for 45 minutes
