Introduction

I use all purpose gluten free flour and 6 small organic farm fresh eggs - I would add more of all the veggies next time.
Great cold too. The flour settles to make a fake "crust" and thicken.

Ingredients

    6 whole small organic eggs
    1/2 small white onions diced
    1/2 red pepper (I recommend more) diced
    1 small zucchini peeled and diced
    3 dashes tobasco sauce (or hot sauce)
    1/8 cup sundried tomatoes (Not packed in oil, minced)
    3 dashes black pepper
    1/4 cup raw green beans cut into small pieces
    1 tsp dijon mustard
    1 1/4 c rice (milk) drink
    1.5 TBSP corn starch
    1/2 tsp baking powder
    1 tsp dried cumin
    1/2 c gluten free all purpose flour.

Directions

Preheat oven to 400
In a bowl add onion, garlic, zucchini, red pepper, cover and heat in microwave for 1 min.

In another bowl whisk together: eggs, rice milk, tobasco, black pepper, cumin, B powder, when mixed add flour and veggies and green beans - mix throughly.

Spray a mini muffin pan with nonstick spray, fill each mini muffin hole with the quiche mixture.

Cook at 400 for about 10-15 min (watch them they will burn quickly!)
great hot or cold.
makes 48 bite sized quiches - if you cook it in a regular pie plate it will take closer to 30-40 min to cook.
