Introduction

We're weekend morning cooks. Well, I cook all the time, but weekends are the only time I do omelets so, I just played around with this one. We're weekend morning cooks. Well, I cook all the time, but weekends are the only time I do omelets so, I just played around with this one.
Number of Servings: 2

Ingredients

    1 cup liquid egg substitute
    1 1/3 Jimmy Dean turkey sausage crumbles
    2 tbsp green pepper
    2 tbsp onion
    2 baby bella mushrooms
    4 cherry/grape tomatoes
    4 tbsp shredded sharp cheddar cheese
    2 tbsp Country Crock + calcium

Directions

Heat a small nonstick pan over low heat. Add in 1 tbsp of the butter. Once it is melted, pour in 1/2 cup of egg substitute. Let that cook for 5ish minutes. (That really depends on your cooktop.) Once the egg is set, the bottom should be done but not brown. Flip egg. Add in 2/3 cup sausage, 1 tbsp each pepper and onion, 1 sliced/chopped mushroom, 2 chopped tomatoes, and 2 tbsp shredded cheese. When the egg is done to your standard, fold over and remove to plate. Repeat to get second omelette.

Serving Size: Makes 2 omelettes
