Ingredients

4 Tsp Olive Oil
1 Onion, Diced
2 Garlic Cloves, Mined
1 Green Bell Pepper, Diced
1 (14.5-Ounce) Can Diced Tomatoes w/Green Chiles
1 (10-Ounce) Box Frozen Corn
.25 Tsp Salt
1/8 Tsp Cinnamon
1 Pound Medium Shrimp, peeled and deveined
2 Tbsp Chopped Fresh Cilantro
4 Lime Wedges (Optional)
Directions
1. Heat the oil in a Dutch oven over medium-high heat. Add onion and garlic; stirring frequently, until golden, about 3 minutes. Add the bell pepper and cook, stirring frequently, until softened, about 2 minutes.
2. Add tomatoes, corn, salt, and cinnamon and bring to a boil. Stir in the shrimp; return to a boil. Reduce the heat and simmer, covered, until shrimp are just opaque in the center, about 4 minutes. Sprinkle with the cilantro and serve with the lime wedges.
