Introduction

This makes a great cold salad that has 1/2 the sugar of most recipes and more fiber with the addition of the chickpeas. This makes a great cold salad that has 1/2 the sugar of most recipes and more fiber with the addition of the chickpeas.

Ingredients

    I - 15 oz can low sodium red kidney beans, drained
    1-15 oz can low sodium chickpeas (garbanzo beans), drained
    1 12 oz bag uncooked green beans
    1/2 sweet vidalia onion chopped
    1/3 cup canola oil
    1/3 cup white distilled or apple cider vinegar
    1/4 cup white granulated sugar

Directions

Steam the green beans in the microwave according to the directions on the bag for 3-4 minutes. Don't over cook.
Cut the green beans into thirds and combine with the kidney beans, chickpeas, and onions.
Mix the dressing thoroughly in a two cup measuring cup and pour over the beans and onions.
Salt to taste with a sprinkle of kosher or sea salt.
Refridgerate until cool.
