Introduction

This is much like chicken fajitas, using the white chicken chili mix (without the tortillas). Served with rice. This is much like chicken fajitas, using the white chicken chili mix (without the tortillas). Served with rice.

Ingredients

    Green Bell Pepper, large, 1/4
    Red Sweet Pepper, large, 1/2
    Yellow Sweet Pepper, large, 1/2
    Yellow Onion, medium, 1
    Chicken Breast, raw boneless skinless 1lb
    Canola Oil 2 tbsp
    McCormick White Chili Chicken Seasoning Mix 1 pkg

Directions

Cut chicken into roughly bite size pieces, place in bowl
Coat chicken with seasoning mix
Slice peppers and onions into strips
Heat oil in large skillet, add chicken and saute
When chicken is nearly cooked, add onions, and after a minute or so add peppers
Saute on high heat until peppers are half cooked (still a little crunchy)
Serve with white or brown rice

Serving Size: Makes six servings

    Possibly, there might be other brand name. Lawry's has a Spices & Seasonings for Chili. The nutritional values are almost identical. I've never tried that one though. I'll give it a try next time myself. You also might try a fajita mix. We experiment with chicken and vegetables, decided to share thi
