Ingredients

    1 carrot
    1 zucchini
    1 red onion
    1 red bell pepper
    1 tomato
    1/4 cup olive oil
    1 cup Macaroni
    1 cup water
    salt, pepper

Directions

1. Slice the carrot, onion,zucchini and pepper.
2.Dice the tomato.
3.Mix all the vegetables, except the tomato with the olive oil, salt and pepper.
4.Preheat the oven to 450 degrees.
5.Transfer the vegetable mixture to a baking sheet and bake until the carrot is tender, and the vegetables begin to brown- 20 minutes.
6.Cook the pasta in a large pot of boiling salted water until al dente- about 8 minutes.
7.Mix the pasta with the vegetables in a large bowl.
8.Add the tomato and season with salt and pepper.
9. Enjoy!:D
