Ingredients

1 1/2 cups dry brown rice
1 tsp turmeric
1/2 tsp salt
1 tsp. Olive oil
2 1/2 cups water
3/4 cup light coconut milk
Directions
There is extra liquid in this recipe because the coconut milk cannot replace it all. The rice is tough with less water.
STOVETOP:
Sautee rice, turmeric & salt in oil for 2-3 minutes or until fragrant. Add coconut milk & water, bring to a boil, then cover and simmer for 45 minutes or until rice is tender.
RICE COOKER:
Plug rice cooker in and turn it on. Pour oil into it and add a few pieces of rice. When rice begins to sizzle, add all of the rice and spices. Sautee for 2-3 minutes or until rice is fragrant.
Add water and coconut milk. If cooker has switched to warm, turn it off and remove the rice insert for a couple of minutes to let it cool off. Then put it back together and switch to cook for 45 minutes or until it switches itself off!
