Ingredients

4 Large Bell Peppers, any color
1 pound ground turkey, 93% lean
1/2 cup prepared brown rice
1 baby zucchini, shredded
1 clove garlic, finely minced
1 tsp. onion powder
1/2 tsp. black pepper
1/2 cup shredded cheddar cheese
1 tbsp. olive oil
Directions
1. Heat a saucepan over medium heat.
2. Add olive oil and garlic and saute the garlic for one minute.
3. Add turkey, chili powder, onion powder, salt, and pepper and cook until turkey is browned.
4. Turn off heat and stir in zucchini.
5. Add brown rice.
6. Slice peppers in half lengthwise and remove seeds.
7. Cook peppers in boiling water for 10 minutes. Put on a greased (one or two sprays of Pam) cooking sheet.
8. Put 1/8 turkey/rice mix into each pepper, then put on 1/8 of cheddar cheese over each pepper.
9. Turn on oven broiler and heat peppers under broiler until cheese is melty.
