Number of Servings: 4

Ingredients

    4 Yellow Fin tuna steaks, approx 6 oz. each

    PESTO
    1/4 lb. fresh basil
    1/4 C. Pine nuts
    6 cloves garlic
    1/2 bunch parsley
    1/4 C. parmesan cheese
    1/4 C. olive oil

    MARINADE
    1/2 C. olive oil
    Juice of 1 lemon
    1/4 C. white wine
    salt and pepper to taste

Directions

In food processor, puree the pesto ingredients. Take 1/2 this mixture and add the marinade ingredients. Marinate the steaks for 30 minutes at room temperature or 1 hour in refrigerator. Grill the steaks on a hot grill for approx. 2-3 minutes per side. The fish should have a thin line of pink through the middle when properly cooked. Don't overcook. Heat the remaining pesto with 1/2 cup white wine and salt and pepper to taste. Serve over fish.
