Introduction
A healthy spin on a classic comfort food. I do not add any fillers like bread crumbs or cheeses. If you would like to add a flavor enhancment, add fresh grated parmesan cheese. The seasonings of the Chicken sausage make this perfect everytime. Growing up, my mom would let me have a whole bell pepper! Now that I am older and understand the need for portion control, I accomplish this by slicing the bell peppers directly in halves. A healthy spin on a classic comfort food. Ingredients

1 15 oz. can of diced tomatoes. For simplicity, select a seasoned variety like Garlic or Italian style.
2 lbs. Sprouts Chicken Parmesan Sausage (approx 5 links) casings removed. Freshmade in store daily.
1 6 oz. can of tomato paste Italian style
3 bell peppers, sliced in half, seeds and stems removed.
Directions
Preheat Oven 350.
Fill halved bellpeppers with chicken sausage mixture. Place open side up in casserole dish. Place 1/2 inch water in bottom of pan. Cover with foil or casserole top.
Bake 45 minutes until filling is firm and bell peppers are soft enough to cut with a fork.
While baking combine tomato paste and can of tomatoes with juice. Last 10 minutes of baking, drain water from casserole dish. Spoon tomato mixture over top of bell peppers.
I do not use additional seasonings because I use the seasoned variety tomatoes and paste. If you do not use these, you will need to season according to your taste. Suggestions are garlic, basil, orgegano, etc.
