Ingredients

· 1 slice whole wheat bread, cut into ½-inch cubes
· 2 tablespoons skim milk
· 2 tablespoons fresh tarragon, chopped or 1 tablespoon dried tarragon
· 2 tablespoons Dijon mustard
· ½ teaspoon sea salt
· ½ teaspoon black pepper
· ¼ cup shredded Parmesan cheese
· 1 ¼ lbs ground turkey
FOR THE TOPPING, COMBINE:
· 2 tablespoon tomato paste (optional)
· 1 teaspoon Dijon mustard
Directions
1. In mixing bowl, combine cubed bread and milk. Mash together until milk is completely incorporated.
2. Add the remaining ingredients (except for the tomato paste and Dijon mustard), crumble the turkey over the mixture and mix well with spoon or hands. Do not over mix.
3. Add the meat to the loaf pan and pat down into a loaf.
4. Place your loaf pan on a baking sheet and place in a preheated 350°F. degree oven for approximately 35-45 minutes.
5. You will able to tell the meatloaf is done by the color and you will see the clear juices bubbling around the edges of the meatloaf.
6. Remove from the oven and glaze the top of your meatloaf with the tomato paste/Dijon mustard mixture.
7. Return to the oven and bake for about 5 more minutes until the topping is bubbly.
Serving Size: Slice into six equal pieces.
