Introduction
I found these round little guys at the Farmers Market and first thing I thought was ohhh, what can I stuff them with? This is so simple and looks so elegant, fancy, healthy, easy!! You can use long zucchini if you like, just cut length wise and scoop out the seeds.Oh and this tasted way better then the pic, I was in a rush to eat so it was a quick picture! They were yummy!!! Ingredients

4 Round Zucchini's - or you can do long
1 large tomatoe - seeded and diced
3 basil leaves chopped
1/4 Tbsp of Parmesan Cheese
1 tbsp of Bread Crumbs
1 oz of shredded or I used 3 balls of mozzarella torn apart
Note: I recommend filling these bad boys to the rim. Since this was my first time creating and making these, I wasn't sure how much to fill them. So fill up! These are perfectly moist and delish!!!
Directions
Preheat oven to 350
Cut out the centers of your zucchini, like your carving a pumpkin. Put all the insides in a bowl. Add diced tomatoes, parmesan cheese, basil and bread crumbs. Give a good mix. I added mine to the food processor and it made like a salsa.
Spoon the mixture into the zucchini and top with shredded mozzarella. I put the tops bake on the zucchini for fun!
Bake for 15-18 minutes or until cheese is bubbly. Check after 10 minutes or so.
