Introduction

Ingredients

2 small potatoes, washed, and diced into fairly even pieces
1 clove of garlic, minced (more to your tasting)
1 Tbsp olive oil
*Salt & Pepper to taste (I use seasoned salt)
4 eggs
1/2 C diced onions
1/2 C reduced fat shredded cheese
Directions
Heat oven to 425.
Dice potatoes (I leave skin on b/c I like it - but you can remove if you prefer)
Place on non-stick baking sheet
Add 1 Tbsp olive oil and toss potatoes in oil
Add minced garlic and toss evenly
Place in oven and bake 20-30 minutes, or until browned and softened (check half way through and turn the potatoes). I also leave in broiler for about 1-2 minutes until thoroughly browned and slightly crispy.
When potatoes are done, turn off oven but leave potatoes in while you make the eggs.
Add onions to a non-stick skillet and saute until fragrant and translucent. Move onions to outside of skillet and add eggs and cook to your preference (I like them over medium). When the eggs are done, add the cheese evenly (1/4 C per 2 eggs).
Serve eggs over potatoes with onions.
Sometimes I add diced veggies (peppers, broccoli, mushrooms, etc.) and add to the potatoes. If you are going to do that, add to the potatoes when they're about half way done. **veggies are not included in nutritional info**
