Introduction

This recipe is my family's favorite way to use over-ripe bananas. Not necessarily low fat, but oh so yummy. This is the original version, but I have used egg beaters and 1/2 cup splenda with 1/2 cup sugar successfully in the past to reduce calories. Ingredients

    3 very ripe bananas
    1 cup sugar
    1/4 cup melted butter
    1 egg
    1 tsp baking soda
    1/4 tsp salt
    1 1/2 cup All purpose flour

    *if using self rising omit soda and salt

Tips

If using dark pans, begin checking at 50 minutes into baking time. This bread freezes well, too.


Directions

Pre-heat oven to 325 F.

Using mixer mash 3 very ripe bananas and mix with sugar until creamy. Add in melted butter and dry ingredients. Mix until blended.

Bake in greased and floured loaf pan at 325 for 1 hour to 1 hour 15 minutes or until toothpick comes out clean.

Makes 16 slices. Calculated using medium size bananas.
