Ingredients

    1/2 C Cucumber, peeled and diced
    1 Egg White, hard boiled
    1/4 C Celery, chopped
    1/4 C Raw Onion, chopped
    1/4 C Chickpeas (Garbanzo Beans),
    3 oz Tuna, canned in water
    3 tsp Dijon Mustard
    1/4 tsp Black Pepper
    juice of 1 lemon wedge (1/6 lemon)



Directions

Hard boil the egg. Peel and remove the yolk. Dice egg white and combine with tuna, chopped vegetables, lemon juice, mustard and pepper.

Scoop mixture into the center of 3 large red or green leaf lettuce leaves and wrap together (depending on size of leaves this can be 3 individual wraps or one large wrap).
