Ingredients

    1 cup White long grain rice
    2 chicken breasts, cubed into bite-sized pieces
    1 cup silced carrots
    2 cups cut broccoli
    1 jar of baby corn (optional, not factored into the nutritional facts)
    1 cup red peppers chopped
    1 cup green peppers chopped
    1 cup yellow peppers chopped
    1 tbsp olive oil
    3 tbsp soy sauce
    1/2 tsp ground ginger
    1/8 cup water

Directions

Begin cooking rice.

Put 1 tbsp olive oil and water in a pan and begin to cook carrots over a medium heat for 5 minutes.

After 5 minutes, add the chicken. Cook for 5 minutes.

After another 5 minutes, add other vegetables, soy sauce and ginger.

Cook over medium high heat for 15 minutes, stirring regularly, or until liquid boils down.

Serve over rice.
