Ingredients

    1/4 lb. bacon, cut crosswise into 1/4 into strips
    1 onion, chopped
    1 tbsp chili powder
    1/2 teaspoon unsweetened cocoa powder
    1/4 tsp tabasco sauce
    2 tsp dried oregano
    2 tsp salt
    1/4 tsp ground black pepper
    2 cups crushed tomatoes in puree (15 oz. can)
    4 cups low-sodium chicken broth
    15 oz. can black beans
    8 oz. turkey, cut into 1/2 inch pieces
    10 oz spinach, cut into 1-inch strips

Directions

Directions:

Cook bacon until crisp. Drain. Cook onions in same pan until transparent, about 5 minutes. Add chili powder, cocoa, tabasco sauce, oregano, salt, pepper, tomatoes and broth. Bring to a boil. Reduce the heat and simmer for 15 minutes. Add the black beans and turkey to the pot. Simmer for 5 minutes. Cut the spinach into 1-inch strips. Stir in the spinach and bacon. Cook until the spinach just wilts, about 1 minute.

    I was prompted to try this since I saw the really high amount of fibre it contains! It's wonderful, just the right spice for us and makes large servings...excellent! - 3/7/08
