Introduction

No-egg muffins - can be made without blueberries, or substitute another fruit (raspberries, rhubarb, cranberries.) No-egg muffins - can be made without blueberries, or substitute another fruit (raspberries, rhubarb, cranberries.)

Ingredients

    1 cup white flour
    1/2 cup whole wheat flour
    salt to tast
    1 tsp baking soda
    2/3 cup white sugar
    1/4 cup oil (safflower or canola)
    3 large bananas, mashed

Directions

Mix dry ingredients (and frozen or fresh fruit, if using). Make a well in centre of dry ingredients and add oil and mashed bananas. Mix lightly. Bake.

Serving Size: makes 12 medium muffins
