Ingredients

    6 egg yolks
    3/4 cup Sugar
    1/2 cup lemon juice
    1 TBLS lemon zest
    1 stick unsalted butter cut into 8 pieces

Directions

Stir together first 4 ingredients in a double boiler and stir continuously over low heat for about 10 minutes or until the curd starts to thicken. Add the pieces of butter and continue to stir until the curd resembles a thick pudding. Take off of heat and put into a clean jar and refrigerate. Will keep for quite a while in the refrigerator.
