Granulated Sugar, 0.5 cup
*Splenda, 0.5 cup
Smart Balance LIGHT Buttery Spread, 7 tbsp
Egg white, 4 serving
Baking Powder, 1 tsp
Salt, 0.5 tsp
*Flour, white, 1.25 cup
Milk, 1%, 0.33 cup
Orange Peel, 1 tbsp
Almond Extract, 0.5 tsp
Glaze:
Powdered Sugar, 0.33 cup, unsifted
Orange Juice, 1 fl oz
Directions
Preheat oven to 350 degrees. Place sugar, splenda and smart balance in bowl and combine. Add two egg whites. Add baking powder and salt.
Add milk and flour by alternating into the batter, beginning and ending with flour. Add orange peel and almond extract.
With remaining two egg whites, beat on high speed (preferrably in a glass bowl) with clean beaters until stiff peaks form. Fold egg whites into batter.
Pour batter into a greased 8x4 inch loaf pan and cook for 50 minutes or until a pick inserted into the middle comes out clean. Cool in pan for 10 minutes on a wire rack; remove from pan. Cool completely on wire rack.
Glaze: Combine powdered sugar and orange juice in a small bowl. Poke holes in the top of the cake using a skewer; drizzle over the cake.
