    1 med onion

    1 lb of 90% lean ground beef

    2 tbsp of Pampered Chef Southwest Seasoning (or sub with Taco seasoning mix)

    2 garlic cloves

    1 can Mexican-style corn, drained (11 oz)

    1 jar (12oz or more) chunky salsa, divided

    1 can (16oz) refried beans

    3 tbsp water

    7 (6 inch) corn tortillas

    2 cups shredded Colby and Monterey Jack cheese blend, divided


1. Chop onion with Food Chopper. In Deep Covered Baker, combine onion, beef, seasonings, and pressed garlic; mix well. Microwave covered on high for 6-8 min or until beef no longer pink. Breaking into crumbles halfway through using Mix N' Chop. Drain beef mixture. In bowl combine beef mixture, corn, and 1 cup of the salsa, mix well. Combine beans and water in small bowl and mix well.

2. To assemble, place 2 tortillas over bottom of baker. Cut one tortilla to fill any gaps as layers are assembled. Spread 1/3 beans evenly over tortillas. Top with 1/3 beef mixuture and 1/3 of the cheese. Repeat layers one time. Arrange remaining 2 tortillas over cheese. Top with remaining beans and beef mixture.

3. Microwave, covered, on High for 12-15 minutes or until center is hot. Carefully removed lid and top evenly with remaining salsa and cheese. Let stand, covered, 10 min before serving!
