Number of Servings: 4

Ingredients

    3 Large Cucumbers, peeled.
    1 cup plain yogurt. [I used Greek.]
    1 T. Extra-Virgin Olive Oil
    2 t. Red Wine Vinegar
    1 T. Fresh Chopped Mint
    1 Garlic Clove, peeled.
    1 t. Coarse Sea Salt
    Black Pepper

Directions

Halve the cucumbers lengthwise. Scoop out seeds and discard. Chop coarsely and transfer to blender or food processor.

Add remaining ingredients and blend until smooth. Chill until ready to serve.

Serving Size: Makes 4 servings
