Ingredients

    barilla manicotti (dry), 7 shells
    spinach, frozen, 16 oz package
    egg whites, fresh, 2 large
    shredded part-skim mozzarella cheese, 1 cup (approximately 3.5 oz)
    low fat ricotta cheese, 1 cup
    fat free crumbled feta, 2 oz
    garlic, 2 cloves (2 tsp), minced
    15 kalamata olives, pitted (45 g)
    gourmet garden basil herb blend, 1 tsp
    fat free marinara sauce, 1.5 cups
    parmesan cheese, grated, 2 tbsp






Directions

preheat oven to 350 degrees.

cook pasta according to directions. drain and set aside.

defrost spinach in microwave and remove excess moisture.
add egg whites, mozzarella, ricotta and feta cheeses.
fold in minced garlic, sliced olives and basil.
combine all ingredients well.

stuff 7 pasta shells equally with mixture.
arrange in baking dish.
pour marinara sauce over shells.

bake for 25 minutes.
top with parmesan cheese and bake for an additional 5 minutes.
