Introduction

Ingredients

    -2 Cartons - Campbell's No Salt Added Chicken Broth
    (this broth is also fat free!)
    -2 cups chopped cauliflower
    -1 cup chopped asparagus (for the soup, I use the discarded end pieces that I save when I steam asparagus)
    -1 cup chopped peppers (yellow, red or green or a combo)
    -2 medium potatoes chopped
    -1 medium onion chopped
    -1 tbsp. garlic powder (you can use fresh garlic)
    -1 tbsp. curry powder
    -1 tsp. cayenne pepper


Directions

-bring 2 cartons of chicken broth to a boil
-chop all veggies in small pieces
-add veggies to chicken broth and boil until all are soft
-use a handheld processor to blend the soup or transfer to processor or blender and puree til smooth.
-return to pot and simmer
-add garlic, curry and cayenne pepper to taste.
-Enjoy!
