Ingredients

    2 Jenny-o turkey breakfast sausage
    1 small red potato, peeled and diced
    1 cup chopped fresh spinach
    1 tbs finely chopped onion
    1tsp olive oil
    3 egg whites
    1 large egg

Directions

boil diced potato til soft. Drain. sautee potato, onion, spinach and sausage until onion is soft and sausage is well cooked.( I precooked my sausages) beat egg whites and egg in a bowl till fluffy and pour over the other ingredients. allow eggs to set, then broil to finish the top. Slice in two. and enjoy.

Serving Size: makes 2 omelet size portions
