Ingredients

    1 medium onion, chopped
    3 Tbsp. Butter
    3 Tbsp. Flour
    Pepper to taste
    2 Cups Skim Milk
    3/4 Cup Colby Jack Cheese

Directions

Saute onion & butter. Stir in flour and pepper. Slowly add milk and stir until thickened. Stir in cheese 'til melted.
