Introduction

I had a bunch of random ingredients and thought a wrap would be delicious for lunch. It turned out really well and I will be eating this for lunch all week! Ingredients

    1 whole wheat tortilla (or any tortilla of your choice)
    2 oz cooked chicken, in slices or chunks
    1/2 C spinach leaves (I used baby spinach)
    2 slices avocado
    1/4 C BBQ onions and mushroom (see instructions for quick recipe)
    3 slices roasted beets





Directions

Wrap:

1. Warm up the chicken to desired warmness. I made it warm, but not hot. If you like cold chicken you can even skip this.

2. Add chicken to tortilla with the rest of the ingredients in layers.

3. Roll up and put in your mouth!


BBQ Onions and Mushroom:

Slice up an onion (I used red) or two into fairly thick slices and saute in a pan with some cooking spray. You could also use olive oil or butter if added fat isn't an issue. After the onions have been cooking a little while add a package of sliced mushrooms. When they are almost to your desired softness add 2-3 Tbsp of BBQ sauce. (Note: The calories for this small recipe are included in the total calories for the wrap, but it will definitely make enough for many wraps) I keep this mix in the fridge to pull out for wraps or burgers or sandwiches.
