Number of Servings: 12

Ingredients

    2 skinless chicken breasts cut in 1 inch cubes
    3 cups fat free chicken broth or stock
    3 cups water
    2 cloves garlic minced
    2 bay leaves
    salt and pepper to taste
    1 pkg frozen mixed vegs
    1/2 cup wild rice
    1 to 2 tbsp cornstarch
    1.25 cups fat free half and half

Directions

cook chicken, garlic , salt and pepper in broth and water. Add Bay leaves, vegetable and rice. Cook for at least an hour on simmer (till rice is done). mix corn starch and ff half and half in bowl and combine with soup. Bring back to simmer until thickened.

makes 12 one cup servings
