Introduction

I love steel-cut oats, but not the time that it takes to prepare them! This is a basic recipe; you can do any number of variations on it, but I prefer to do the add-ins later so I can easily adjust what goes into my nutritional tracker. The cinnamon and nutmeg, plus a few drops of Vanilla Creme liquid stevia added after it's cooked, gives this recipe a flavor reminiscent of bread pudding -- yum! Number of Servings: 6

Ingredients

    1 c. steel-cut oats
2 scoops Gold Standard 100% Whey Protein Powder
1/2 c. milk (I used 1%; soy, almond or skim would work fine)
    4 c. water
    1 tblsp. cinnamon
    1 tsp. nutmeg

Directions

Spray crockpot with cooking spray (don't skip this step!). Combine all ingredients and stir well. Cover and cook on low for 8 -9 hours.

Serve with your choice of sweetener, nuts, and fresh or dried fruit.

A tip: Corelle makes cereal bowls with microwaveable lids (Wal-Mart carries them). I divvy up the recipe between 5 bowls, put the lids on and stick them in the 'fridge. In the morning, I can put a bowl directly into the microwave and have my breakfast ready in just a minute!
