Ingredients

1.5 cup whole wheat flour
1.5 cup all purpose flour
1 tsp. baking soda
1.5 tsp. baking powder
.5 tsp salt
2 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. ground ginger
3 TBSP. flaxmeal
2 TBSP. wheatgerm
10 TBP. water
4 TBSP canola oil
1.25 cup sugar
.75 cup splenda
.75 cup applesauce
1 TBSP vanilla
2.25 cup grated zucchini
Directions
Mix first 8 ingredients together in a bowl. Then mix flaxmeal, wheatgerm and water in a separate bowl. Next, add the the canola oil and sugar to the water mixture. Then whisk in the applesauce, vanilla and zucchini.
Now add the wet mixture to the dry, whisking it in 1/3 of the flour at a time, until well mixed. Do not overmix because you don't want to activate the gluten in the flour.
Grease and flour two standard size loaf pans. Divide the batter equally between the two.
Bake in a preheated 325 degree oven for 60-70 minutes or until toothpick inserted in the the center comes out clean.
Cool on a rack about 15 minutes, then slide a knife around the edges to unmold. Place right side up on a rack to cool.
Serving Size: Makes 2 loaves standard size loaf pan sliced into 8 slices
