Introduction

This is a very flavorful and herbaceous hummus. I adore cilantro and roasted garlic so I add a ton, but you may not want to add as much. For roasted garlic, take a full head, remove some of the loose papery skin, and chop the top off the head to expose the cloves. Add a little salt, pepper, and olive oil, and bake at 425º for 20-30 minutes or until the tops are brown and the cloves are starting to burst from their skin. Ingredients

    2 15 oz cans garbanzo beans, drained
    1 tbsp tahini
    juice from one lemon
    3/4 cup chopped cilantro
    2 heads roasted garlic
    Salt and pepper to taste
    3 tbsp olive oil

Directions

In a food processor, add garbanzo beans, tahini, lemon juice, cilantro, roasted garlic cloves, salt and pepper. Blend and add olive oil until you reach the desired consistency.
