Introduction

This recipe still needs a little tweaking as it can be dry. But it really isn't bad for a pancake fix. I'm doing low carb and I'm pleased with the carb count with these.
For these I just used what I had on hand, you can sub in other milk or oil, it should be fine.

Number of Servings: 4

Ingredients

    3/4 cup whole wheat flour
    1/4 cup oat bran
    2 tsp baking powder
    1/4tsp salt
    1/4 tsp ground cinnamon
    3 tsp splenda
    1 tbsp olive or veg oil
    1 tsp vanilla extract.
    1 large whole egg
    1 cup 2% milk

Directions

Heat non stick skillet to medium-low.
Combine all dry ingredients, then add all wet ingredients and stir until just combined. There should be lumps and no dry spots.
Pour 1/4 cup of batter on skillet and cook until edges appear dry and bubbles pop at the top. Flip and cook until no longer gooey. It's hard to say how long.
Then enjoy with whatever topping you please.

Serving Size: approx. 4 2-pancake servings
