Introduction

Adapted from EatingWell magazine. I reduced the amount of mayo (and I'm using the Smartbalance kind here), and replaced it with fiber one cottage cheese. Ingredients

    7 oz of low fat cheddar, shredded or very small dice
    1/4 c Smartbalance mayonnaise
    1/2c fiber one cottage cheese
    3-4 T finely chopped Red onion (according to taste)
    1 small jar chopped pimentoes (well drained)
    a few dashes of Tabasco or other hot sauce, if desired

Directions

Shred the cheddar cheese into a bowl
In a food processor, mix the mayo, cottage cheese and Tabasco (if using), until smooth and creamy
Add the mayo cottage cheese blend to the shredded cheese, add the onion and pimentoes, mix together, enjoy on bread, crackers, or celery.

Serving Size: makes about 6, half cup servings
