Introduction
These cookies have reduced the fat by using light margarine and replacing some of it with applesauce. I have also replaced 1/2 cup of flour with flax meal and wheat germ. Ingredients

1/2 cup light margarine
1/3 cup unsweetened applesauce
2/3 cup packed brown sugar
1/3 cup white sugar
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
1/4 cup ground flax seed meal
1/4 cup wheat germ
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups quick cooking oats
1/2 cup chocolate chips
1/2 cup dried cranberries (sweetened)
Directions
Preheat oven to 350.
In a large bowl, beat margarine, applesauce and sugars until creamy. Add eggs and vanilla, beat well.
In another bowl combine flour, flax, wheat germ, baking soda, cinnamon and salt. Mix well.
Mix wet and dry together well. Stir in oats, cranberries and chocolate chips.
Drop batter by rounded tablespoonfuls onto parchment covered cookie sheets at least 1" apart (about 12 per sheet). Bake 8 minutes until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack and cool completely. Store tightly covered.
*48 cookies is a lot - but they freeze well so I usually freeze half. This also helps to stretch out the batch over 2 weeks.
