Ingredients

    2 large eggs beaten
    half a cup of fresh spinach
    half a cup of fresh white mushrooms
    2 tablespoons of choopped onion
    2 tablespoons of chopped bell pepper (any color)
    2 tablespoons of parmesan cheese or any cheese you prefer
    Salt and pepper to flavor

Directions

I saute all the vegetables in a tablespoon of olive oil before I put them in the omelette so they are more tender. When the vegetables are sauteed sit them aside. I let the eggs cook a little while before I put the vegetables and cheese on it so it is easier to cook and flip.
