Introduction

Ingredients

    1.55 cups yellow cornmeal (or white)
    2.55 cups buttermilk
    2 cups gluten free all purpose flour
    1 T baking powder
    1 tsp baking soda
    1 tsp salt
    .66 cup sugar
    2 large eggs
    .55 cup vegetable oil or melted butter

Directions

Preheat oven to 400 degrees. Combine cornmeal, milk, eggs and oil. Let stand 10 minutes. Combine gluten free flour, salt, baking powder, baking soda. Stir into liquid mixture. Bake in greased 9 x 13 pan or large preheated iron skillet, buttered. Bake 30 minutes or until done in center.
