    2 egg whites
    1 cup milk
    1/4 cup brown sugar
    1/2 cup apple sauce
    14 cup ground flax seed
    1 cup all purpose flour
    1/2 cup whole wheat flour
    1/2 cup soy four
    2 tsp baking powder
    1/2 tsp baking soda
    1 cup coursely chopped cranberries


Beat egg whites, milk, sugar, and apple sauce with electric mixer. Sift and add flours, flax seed, baking powder and baking soda into the beaten liquid ingredients. Mix well. Add cranberries and stir by hand just to get them well distributed.

Pour into a non-stick or sprayed loaf pan. Bake at 375 degrees F for about 45 minutes or until done.

Can be served either as a bread or as a dessert topped with whipped cream or yogurt.
