Ingredients

    1 lb. chicken breast, cubed
    1 tbsp. canola oil
    1 can Green Giant whole kernel vacuum pack corn
    1 can Eden black beans, no salt added
    1 jar Newman's Own all natural chunky salsa, mild or medium
    1 Tbsp. Tiger Sauce
    1 cup cooked brown rice
    1 cup low sodium chicken broth or water
    Salt and pepper, to taste

Directions

Saute cubed chicken in oil until pink is gone. Drain and rinse beans and corn; add both to skillet. Add salsa and broth, stirring to mix well. Stir in tiger sauce. Cover; simmer until heated through. Add salt and pepper to taste.
Serve with reduced fat sour cream (not calculated in nutritional info).
