Ingredients

    8 Medium Carrots, peeled & diced
    4 Stalks Celery, diced
    2 - 8oz Cans Water Chestnuts, drained & diced
    6 Green Onions, thinly sliced
    4 Tbls Ginger Root, grated or minced
    8 Cloves Garlic, minced
    2 Large Red Bell Peppers, diced
    2 LBS Ground Turkey Breast
    1 Cup Bottled Chinese Plum Sauce
    4 Tbls Soy sauce
    4 Tbls Rice Vinegar
    2 tsp Chili paste
    1/2 Cup Cashews, chopped
    1/2 Cup Cilantro, Minced
    Lettuce (Big Romaine Leaves)


Directions

Sautee meat and then sautee veggies and garlic/ginger. Mix plum sauce, vinegar, chili paste and soy sauce (I also add some red pepper flakes to give it a bit of a kick) and then add to the veggie/meat mix. Reduce to low and simmer. Add cilantro and cashews at the end.
