Ingredients

2 Cups All-purpose organic flour
2 tbl baking powder
1tbl plus 1 tsp sugar or sugar substitute
2 tsp salt
1/4 cup butter
1 1/2 cups mashed sweet potatoes
1/5 cup milk
Directions
Preheat Oven to 375 degrees F
In medium bowl stire together the flour, baking power, sugar and salt. Cut in the butter until pieces of butter are pea sized or smaller. Mix in the sweet potatoes, and enough of the milk to make a soft dough.
Turn out dough onto a floured surface, and roll to 1/2 inch thick. Cut into 16 circles and place about 1 inch apart on greased baking sheet.
Bake for 12 - minutes in preheated oven or until golden brown.
