Directions
Wash spinach as needed. pat dry with towel.
Peel garlic and slice thinly.
Need a large saute pan with lid.
Heat pan over medium, add olive oil. When shimmering (hot), add onion. saute until soft and translucent 5 to 8 minutes.
Add Spinach, garlic and water. Sprinkle with salt. Turn heat to medium low, cover pan with lid and allow to cook for 5 to 20 minutes until spinach is just soft (the more mature the spinach, the longer to cook).
Rinse and drain chickpeas well. Add to cooked greens and heat just until heated through. Stir in hot sauce.
Serve over hot rice.
