This is a hearty chili - sweet and spicy! Only 150 calories per serving and less than 2 grams of fat, but super filling thanks to some serious beans. This is a hearty chili - sweet and spicy! Ingredients

1 lb. boneless, skinless chicken breasts
1 yellow onion, chopped
3 stalks of celery, chopped
4 cloves of garlic, pressed
1 can of black beans, drained
1 can of chick peas/garbonzo beans, drained
1 can of dark red kidney beans, drained
2 16 oz. cans chili tomatoes, with juice
1 16 oz. can tomato puree or small can of paste
1 cup of frozen corn kernels
3 cups of low sodium chicken broth
2 tbsp. of brown sugar
2 tbsp. chili powder
1 tbsp. cumin powder
2 tbsp. lime juice (for cooking chicken)
Directions
Chop onions and celery, press garlic or just use a heaping tablespoon of the chopped garlic from a jar. In a crockpot/slow cooker, add all ingredients except chicken. Saute chicken breasts in lime juice and a dash of chili powder. I use non-stick spray first. Shred or chop chicken and add to crockpot. I usually keep the pot on high until it begins to simmer, then turn to low. Once the celery and onions are tender, it's done. For a faster recipe, saute the celery, onions and garlic first, then add to crockpot.
Top with reduced fat cheese and fat free sour cream for something extra!
