Introduction
If you like dill, this is my favorite way to prepare salmon. "Gourmet " enough to be used for a company dinner" meal.Any left overs make a great, cold salmon salad mixed with left over sauce or mayonnaise, for lunch the next day.

Ingredients

4 fresh salmon filets (3-4 oz/each)
1/2 C sour cream or plain whole milk yogurt
1/2 C mayonnaise
Juice from 1/2 fresh lemon (save rind)
1/2 C Fresh dill (snip into fine thread w/ scissors)
salt & pepper to taste
Directions
Using 8x10 roasting pan:
Pre heat oven to 400 degrees & spray pan w/ olive oil
1. Mix all ingredients except salmon in a small mixing bowl
2. Place filets in roasting pan and brush dill/sour cream dressing on upper half of filet generously
3. Cut lemon rind into slivers a place around filets
4. Bake 20-30 minutes, depending on thickness of Filets.
5. Serve hot & enjoy!
