Ingredients

Garlic powder
Dagoba “Xocolotl” cocoa powder
Black pepper (I like coarse-ground)
Rack of Baby back ribs
Olive oil
Directions
Rub: In a small bowl, mix cocoa powder and garlic powder in a 3:2 ratio (or to taste). Add ground pepper to taste.
Ribs: Parboil ribs for about a half an hour. Preheat grill to around 300-325 degrees.
Pat meat dry, then paint a light coat of olive oil over all sides of ribs. Coat ribs with rub. Allow to rest at room temperature for 15 minutes.
Place ribs on grill and cook for 1-1.5 hrs, until meat is tender and rub has caramelized. Remove from grill and cover with aluminum foil. Allow to rest for 5-10 minutes.
Serve the ribs with warm BBQ sauce on the side or ladled artfully on top of the “stack o’ ribs”.
