Introduction
I got this recipe from a book called American Wholefoods Cuisine and adapted it to lower fat ingredients.A great way to have a light dinner with many different kinds of fillings. The honey would be if you wanted desert crepes. Leave out for savory or dinner crepes. This recipe is nice because you only have to let it sit for 15 minutes instead of like 30 to 60 before. Ingredients

fat free cottage cheese kroger, .75 cup
Egg substitute, (Egg Beaters), 1 cup (can use 5 egg whites)
*Whole Wheat Flour, 0.25 cup
Olive Oil, 1 tbsp (I think you could leave this out, but it's minimal fats)
*Honey Aunt Sue Raw wild honey, 1 tbsp (optional)
Directions
You mix all the items in order in a blender and mix on high for about 4 minutes. Let sit for 15 minutes. Heat a medium sized non stick pan or crepe pan if you have one. spray with pan spray. The recipe said to use 2 TB of the batter. I measured this out and it's 1/8 C measure, which was easier than dolling out 2 Tb.
pour it in the middle and then swirl the pan around to spread the mixture as quickly as you can. watch bubbles form and check the bottom to see if it's golden, then carefully flip over. store with wax paper in between. Serve with any type of filling you like!

I'm going to try this recipe this morning, and sub coconut oil for the Olive Oil. Thank you for this simple recipe!
