Introduction

Ingredients

1 8 oz. can crushed pineapple in natural juice.
1 cup sugar
1 cup cold water
1 envelope (.25 oz.) gelatine
1 8 oz. block cream cheese (softened)
10 Marachino Cherries cut in quarters
2/3 cup chopped pecans
a few drops of red food coloring (optional)
Directions
Makes about 14 1/2 cup servings
Place 1 cup cold water in large mixing bowl and sprinkle gelatine on top. Let sit for 5 min.
Place sugar and pineapple in small sauce pan on med/hi heat. Let boil for 5 min.
Add boiling pineapple mixture to bowl of gelatine mixture and add cream cheese while still hot. Mix very well. Add food coloring (I use about 1/4 teaspoon) and mix well. Place bown in freezer until soft set.
Add cherries and pecans. Mix in cool whip and pour into serving bowl or a jello mold or ring. Chill several hours or over night.
