Introduction

Ingredients

    Crab Meat (I used basic canned, real crab meat. You can also use crab meat in any form, chopped up, or imitation crab is also good - but this is usually NOT gluten-free), 10 oz
    Lemon Juice from 1 lemon
    Tarragon, dried or fresh chopped - to taste. I use a lot (3-4 T fresh)
    Celery, raw, 1 cup, strips
    Scallions, raw, 3 medium, chopped dark greens only
    Pepper, black, to taste (a few dashes)
    Reduced fat mayo, 4 tbsp
    Artichoke Hearts (canned, drained), 2 cups

Directions

Mix all and chill at least a few hours.

Serving Size: 3 large meal portions or 4 smaller portions.
