Ingredients

    Meatball mix
    1 pound ground beef 90/10
    1/2 pound hot mexican chorizo (3 links)
    1 egg
    1/2 cup bread crumbs
    half bunch cilantro chopped
    3 tbsp finely minced onion
    salt and pepper

    Broth
    1-2 tsp olive oil
    I can tomatoes
    1 large onion diced
    1 jalapeno diced
    4 cloves garlic minced
    chopped cilantro stems
    oregano
    3 packs chicken bouillion powder
    cumin 1-2 tsp
    1 large zucchini or squash diced

Directions

cook onions, pepper, cilantro stems, and garlic in oil for 2-3 minutes, add tomatoes, oregano, cumin, and bouillion. Add 5-6 cans of water. Mix meatball ingredients, roll into small meatballs. Bring broth to low boil and carefully drop meatballs in soup. Simmer 10 minutes. Add diced squash and simmer another 10 minutes. makes 3.5kg
